Paris


Benoit has had its doors open since 1912, serving generations with its cosy and traditional food. Their dishes are plated with patience and precision, and their desserts remind you of that indulgence, done right, that never goes out of style. More than a meal, Benoit is a portal to a Paris that refuses to forget its roots. Holding one Michelin star, it continues to celebrate the timeless spirit of French cuisine with authenticity and grace, where the great classics, pâté en croûte, snails in their shells, black pudding, and sweetbreads, are perfected with finesse and love under the leadership of Kelly Jolivet, who became head chef in January 2022 at just 28 years old.

Verona


From the moment you step inside Casa Perbellini 12 Apostoli, the restaurant’s cosy, well-crafted ambience makes you feel at home, setting the stage for a truly personal “Chef Experience.” With three Michelin stars, Giancarlo Perbellini brings his signature warmth and precision to every detail. After years spent in Piazza San Zeno in Verona, the chef chose to refine his idea of Casa, making his mark once again. The restaurant presents three distinct tasting journeys to its diners: “Io e Silva”, a tribute to his wife, showcasing bold and imaginative creations like cooked and raw shellfish with soy and peppers; “Io e Giorgio”, an homage to his mentor, offering timeless, classic dishes; and “L’Essenza”, a vegetarian exploration of pure flavours.

Milan


Brothers Remo and Mario Capitaneo, hailing from Apulia, relocated to Milan early on in life to pursue their culinary calling. Their restaurant, with an open-view kitchen and three long tables facing the chefs, offers a front row dining experience. Built around the freshest seasonal ingredients, their menu elevates natural flavours without excess, featuring standout dishes like Fusilloni pasta with Comté cheese, whisky and caviar, and peanuts ravioli with smoked eel and chicken consommé with citrus.

Tokyo


At Mitsui, they keep it simple with one omakase course at ¥27,500, offered to only a handful of diners: nine at the counter and four in a private room. From the moment it opened, the restaurant has been fully booked, reflecting how the restaurant is definitely serving something absolutely memorable. With one Michelin star, Mitsui Sho, the head chef, crafts each course using only the finest ingredients purchased directly from producers across Japan. The harmony between these carefully selected ingredients and the crisp vinegared rice defines the experience. Mr Mitsui, who holds a sake diploma, also curates a unique pairing to complement each nigiri perfectly.

At COYA, classic Peruvian flavours are reimagined through a thoughtfully curated, contemporary menu, featuring dishes like the aromatic mushroom rice hot pot and the zesty, flavorful sea bream ceviche. Bangkok


In December 2024, Garima Arora earned two Michelin stars with Gaa, making Arora the world’s first female Indian chef to lead a two-Michelin-star restaurant. Her tasting menus reinterpret street food classics and explore regional traditions, with upcoming creations inspired by India’s Malvan coastal region. Each of her dishes showcases her love for India’s culinary diversity, making dining at Gaa a thoughtful journey through taste, tradition, and innovation.

Jamavar in London takes its name from the intricate 16th-century lace shawls of Kashmir. With one Michelin star, it is the first international outpost of the renowned Indian fine dining concept by LSL Capital, co-founded by Dinesh and Samyukta Nair in 2016. Since earning its star in the 2022 Great Britain and Ireland Guide, Jamavar has cemented its place in London’s fine dining scene. Here, exceptional pan-Indian dishes are thoughtfully prepared by culinary director and executive chef Surender Mohan, using the freshest British produce and authentic Indian cooking techniques. Straight from the tandoor, the stone bass tikka delights, and the rich gucchi lababdar is not to be missed.

Carpaccio at Le Royal Monceau Raffles is a Michelin-starred celebration of Italian elegance and flavour. Blending Sicilian charm with Parisian sophistication, chefs Oliver Piras and Alessandra Del Favero, in collaboration with the famed Da Vittorio family, craft refined dishes rooted in authenticity and warmth. With one Michelin star, Carpaccio has also been awarded the title of “The Best Italian Restaurant in the World” by 50 Top Italy in 2024. The inspiring menu, created in partnership with the revered Da Vittorio restaurant in Brusaporto, showcases exceptional craftsmanship and flavour. Pastry Chefs Yazid Ichemrahen and Alexandre Favre have designed a dessert menu that celebrates transalpine ingredients while artfully defying expectations, a true taste of la dolce vita in the heart of Paris.
