However, the menu redefines the region's culinary scene by incorporating “modern European concepts with deeply refined elements of Japanese cuisine.” The dishes that belong to this category include onion, liquorice, and almond; langoustine with koshihikari rice; scallop with fermented apricot and turnip; chawanmushi with smoked beef broth, razor clam, and bafun uni; turbot with beurre blanc, walnut, and the “Frantzén selection” caviar. This menu concludes with a frozen lingonberry marshmallow with blackcurrant and spruce. Finally, the meal concludes with matcha waffles with carrot ice cream and pistachios. This experience leaves FZN as the new world standard of gastronomical sophistication.
